Getting more and more anxious about things Especially nursery !

Hi All
For the past two weeks Cian has been taking less and less milk , he has got an ear infection and is off his food this week anyway. He has one day left of antibiotics.I had stopped stressing about this until today !!
All week he's taken 5 ounces of milk On average each day and refused his neocate spoon.  Today he drank 3 ounces took the neocate spoon. I took him to nursery and requested they gave him custard for tea to increase his milk intake, my husband collected him and said he had a chicken dinner with mash !! With plain jelly not even made with milk !! I asked my husband did they use diary free with the mash but he didn't ask . My husband thinks I'm making a big deal of this and I shouldn't be worrying about his milk intake and the nursery know what they are doing but today has left me anxious that they can't follow my instructions. I also can't get him to drink much water so I keep offering it to him but how can I trust the nursery to do this.
Don't see the Dietican til a week on Monday. When I initially met with the nursery last week they said all the right things , they would get diary free spread in and I left them a list of foods he could have , potato was one I was leaving off for now , but they gave him some , when my husband questioned it she said it was only a small amount .
So not only am I worrying about his milk intake I'm now worrying the nursery won't gp to any lengths to ensure he gets enough. I try very hard adding an ounce here and there to his meals but I'm back at work week on Monday so I can't do this.

Do you think I'm making more out of this than I should as my husband thinks ?

So true Bev , I Would not trust my in laws for that reason as they once commented " give him a rusk with milk in , he's not been tested for milk allergy" !!! Grrr
I will speak with the manager and the cook .  I had thought about taking some hand outs in ( your nursery sound very good ) and like you say he does get tea very early , I hadn't thought about supper as he keeps refusing his bottle point blank but he may eat some custard ( or neocate spoon as dont trust they would remember each time )I'll try that . I said on Friday I was going to send my own food in but my husband said to give them a chance as its just " teething problems"  
Ive got an appointment with the Dietican week on Monday to go through a diet plan so I will give them a copy also.
I think a lot of my anxieties stem from my job as a care home manager as I see so many slip ups and have to deal with these so I know only too well what can happen. My husband thinks because of this I'm expecting things to go wrong !! 

Fingers crossed there are no more problems xx
